It’s low carb, gluten free, and simple to make.
I often make ahead leave in the refrigerator for dinner later in the evening. All you have to do is take them from the fridge and place them into the oven and bake. I do this all the time.
How Do You Make Stuffed Bacon Cheeseburgers in the Oven?
Preheat Oven to 305 degrees
- 2 tbsp Coconut Oil
- 1 purple onion – chopped
- 3/4 cup shredded cheese (your choice) I use what I have in the frig – either cheddar or mozzarella
- 1 inch cut piece of bacon as a topper
- 2.5 lbs ground beef (I use 80/20 or grass fed)
- 1/2 tsp Salt
- 1 tsp Black Pepper
- 1 cup shredded cheese (your choice)
- 5 tsp of Spicy Brown Mustard
- 1 slice of bacon per burger (or as many as you like-I sometimes use 2)
To prepare filling –
Chop purple onion and set aside.
Shred Cheddar Cheese – set aside.
I buy block cheese and shred my own using my Cookware Kitchen Cutter that I have had for years.
I do this since I learned companies put a corn starch or cellulose fiber on shredded cheese to prevent it from sticking together. They also use a Natamycin mold inhibitor that is not natural. So for us, block cheese it is.
The cornstarch and cellulose fiber both add carbs to the cheese as well.

Note there are other cheese cutters on the market, as a this Cheese Grater Vegetable Slicer made of stainless steal. I own this one as well and use it often. I realize the Cookware Kitchen Cutter is a bit pricey, but I received it as a wedding gift 25 years ago and it still works very well to this day. The choice, of course is yours.
In a large mixing bowl, add ground beef, salt, pepper, shredded cheese and spicy mustard – mix well.
Once mixed well, I use my hands and take out approximately 1/3 pound of ground beef mixture. Roll it into a ball and place them into my foil-lined cookie sheet. The foil is strictly help with clean up of my cookie sheet – you do not have to line your sheet.
Then using 2 fingers, press a “hole” into the center of ground beef and continue to “pinch” and form into a bowl shape. Note – leave enough ground beef on the bottom to hold the filling.
I learned this the hard way. It does’t work well when baking and the cheese filler oozes out the bottom or is stuck to the cookie sheet.
After making all your ground beef bowls, place inside a bit of coconut oil (this is just good for you and adds fat to the burger)
Fill with shredded cheese and chopped onion.
Lastly wrap stuffed ground beef bowl with bacon (they will overlap if using more than 1). Place the 1-inch piece of bacon on top of cheese and onion.
Repeat this for all burgers. Now it’s time to put your stuffed bacon cheeseburgers in the oven and the house smell wonderful!
Stuffed Bacon Cheeseburgers Placed in the Oven
Place into preheated oven and bake at 350 degrees for about 45 minutes. (Tip, grease will run out of your burgers as they are cooking. So be sure your cookie sheet is deep enough or have a run-off pan in the bottom of your oven.
Serve up your stuffed bacon cheeseburgers recipe with some homemade Hash Browns. You can cook them either on the stove top or in the oven. Either way your family will love them. Smother with some homemade ketsup and you have a busy weeknight dinner easy to make meal.
