Whether you are on a keto diet or just looking for a low carb healthy easy dinner recipe this one-skillet Creamy Tuscan Garlic Chicken can be ready in only 30 minutes. It will become a weeknight family dinner favorite.
This tasty Creamy Tuscan Garlic Chicken is made with tangy sun-dried tomatoes and a creamy rich Parmesan sauce and fresh spinach or if you prefer, broccoli.
I’ve used both, and I assure you, your family will love it either way and you’ll love it even more since it is such an easy-to-cook meal.
The boys don’t care for broccoli by itself, but they sure will eat it up when I put it into my creamy Tuscan Chicken Recipe.
What Side Dish To Serve With Tuscan Chicken
This restaurant style Tuscan Chicken recipe tastes a lot like Olive Garden, one can only think of a beautiful green salad with a variety of beautiful lettuces and of course fresh sliced cucumbers and tomatoes with a favorite dressing.
We keep our meals grain free so we don’t eat rolls, but if you are looking for an easy dinner roll recipe, these light and fluffy dinner rolls from Homestead Acres are a perfect side dish. Or even serve this from scratch recipe over your favorite pasta noodles.
But if you are eating healthy low carb meals, another great side to serve would be these easy sauteed garlic green beans.
Creamy Tuscan Garlic Chicken Recipe
Ingredients
- 2 pounds boneless skinless chicken breasts, sliced thin
- 3 TBS Olive Oil
- 1 cup heavy Whipping Cream
- 1/4 cup chicken broth, I use & love this
- 2 tsp Garlic Powder
- 3 tsp Italian Seasoning
- 3/4 cup Parmesan Cheese, grated
- 1 cup fresh Spinach leaves, chopped
- 1 cup Sun-Dried tomatoes
Instructions
1). In a large cast-iron skillet, I use this one, add olive oil and chicken. Cook on medium heat until chicken is light brown and no longer pink inside. Approximately 3-5 minutes on each side. Remove chicken from iron skillet and set aside on a platter.
2). In the same skillet, add whipping cream, chicken broth, garlic powder, Italian seasoning and Parmesan cheese. Cook on medium-high heat, stirring constantly, until sauce begins to bubble.
3). Add in spinach or broccoli florets and sun-dried tomatoes, continue to stir for 1-2 minutes or until spinach or broccoli florets wilts.
4). Place chicken breasts back into skillet, allow to simmer for 5 minutes and serve hot with your favorite side dish.
Note: The chicken will seep these delicious juices out on the platter, be sure to pour this into the skillet with all ingredients. It will help to add a delightful flavor.
How To Freeze Creamy Tuscan Chicken
Can Tuscan Chicken be frozen? Sure it can!
I do this a often for my husband who travels and always takes his meals with him. I freeze his in individual servings, but I also use this as a make-ahead freezer meal too. It’s perfect to have when super busy or company is coming over.
Cook recipe as normal then allow to completely cool to room temperature. Then, place skillet meal into 2-9×9 foil pans. Cover well with foil and place in the freezer. Use within 30 days.

To reheat: Place frozen dinner in the frig 24 hrs in advance and allow to thaw a bit. Then place in the oven and bake at 350° for about 30 minutes. Creamy Parmesan Garlic Sauce will be bubbly and hot.
If you need it and it’s not thawed, place it in the oven on 325° and bake slowly for 45 minutes to 1 hour. It’s heated when creamy garlic sauce is hot and bubbly.

Don't care for spinach? Fresh broccoli florets will work too. This recipe can be frozen, see article for instructions.
