We started the Keto diet 5 weeks ago, my husband has lost 28 lbs so far, and I’m feeling great!  So that triggered the thought, why not share with you one of my easy to fix Low Carb Chicken Parmesan Pizza recipes.  It’s a hit with my family!  And I’m sure it will be with yours as well.

Actually the kids have no idea what they are eating is good for them – they only know it’s pizza and they ask for more.  A good thing and even better – its a no carb crust!

The food in this diet plan is so easy to fix I don’t even want to call it a diet.  We are trying to increase fat – total opposite of what we have been taught all our lives.  To learn about Keto, I signed up and took the course – Keto Jumpstart: Fueled By Fat, Driven By Desire at Let’s Truck University The course is written by  Kevin Rutherford, NTP – $29 well spent.

Those guys and gals see it all, hear it all, and endure a lot in the work they do.  Home is pretty much lived on the road and if you are trying to eat real food and be healthy,  you well know the fast food industry sure isn’t concerned.  Living on the road, fast food is about the only choice.

Even if your family does not live on the road, all the recipes I will be sharing over the next few weeks can for sure be done at home.  No excuses!  Do you want to be healthier, maybe lose some weight all that good stuff?  Then follow along the next few weeks.

Chicken Parmesan Pizza (Keto Friendly)

  • Yields:  4-6 servings
  • Prep Time:  10 minutes
  • Cook:  400 degrees-  for 25 minutes
  • Preheat Oven to: 400 degrees

Ingredients:

Crust:

  • 1 pound Ground  Chicken
  • 3/4 cup Parmesan Cheese – freshly grated
  • 1 tsp Italian Seasoning
  • 1 Garlic Clove – minced
  • 1/4 tsp Sea Salt
  • 1/2 tsp Peppercorns- freshly ground
  • Pure Coconut Oil

 

 

Toppings: 

  • 1 cup Pizza Sauce
  • 1 cup Mozzarella Cheese – freshly grated
  • 1/4 cup  Onion – chopped
  • 1/4 Green Bell Peppers – chopped
  • 1 Pkg Pepperoni Slices – original

Instructions:

Crust: 

  • Line a cookie sheet with parchment paper, grease parchment paper using Coconut Oil- Set aside
  • In a large mixing bowl, mix chicken, Parmesan Cheese, Italian Seasoning, Garlic, Salt and Pepper
  • Dump mixture onto parchment paper and using your hand, flatten out to about until about 1/2 inch thick
  • Bake at 400 degrees, about 20 minutes, until crust is golden brown.  Remove from oven.

Toppings:

  • Spread pizza sauce over crust leaving a 1/2 inch around the edge
  • Top with onions, peppers, Mozzarella Cheese, and Pepperoni
  • Place back and in oven, bake until cheese is melted – 5-7 minutes

Remove and slice.   My pizza is never round.  It’s much easier for me to flatten it out in the shape of my cookie sheet.

A Little Extra

TIP:  When I make pizza, I have to make 2.  If you do too, don’t mix the chicken into a 2 pound ball. Prepare them separately to keep the accurate 1 pound for a single pizza crust.
