This one-pan Kielbasa with Peppers and Onions Recipe is sauteed in delicious Spaghetti Sauce. It can be cooked in a cast-iron skillet or other large saute pan. It’s super easy to make and can be ready to eat in 30 minutes or less.

Since we are following a low-carb Keto meal plan, this recipe is perfect for our family.

I don’t know about you, but we could enjoy a Kielbasa recipe for dinner every night of the week. I love its garlic flavor, and then cook it in a zesty homemade Italian spaghetti sauce, “YUM!”

This easy-to-make recipe is full of flavor, and it’s healthy, low-carb, and just plain delicious! This is a perfect quick meal prep recipe for work lunches or a busy weeknight dinner meal.

Kielbasa with Pepper & Onions Recipe

Ingredients:

  • Kielbasa Sausage
  • 1 cup Sun Dried Tomatoes in Oil
  • 3 cups Bell Peppers, sliced
  • 2 cups Onion, sliced
  • 1 quart Spaghetti Sauce (4 cups)

Instructions:

On the stovetop, I use a 12-inch cast-iron skillet, or you can use a large saute pan too.

Slice up Kielbasa and toss into a cast iron skillet. (I use two packages) This normally gives us leftovers for another meal.

Pour in 1 cup of homemade Sun Dried Tomatoes, and cook on medium-high.

In the meantime, slice the peppers, I use frozen, and onions. Toss these into the Kielbasa and tomatoes. Stir and allow to cook for 10 -12 minutes while stirring frequently.

Pour in a jar of spaghetti sauce and reduce heat to medium-low. Cover and allow to cook for 15 minutes.

There you have it, a low-carb meal that is ready in 30 minutes. Dinner is done!

Can This Kielbasa Recipe Be Made Ahead?

Sure it can! Simply cook it as this healthy Kielbasa recipe shows. If you will be eating it within a couple of hours, it can remain on the stovetop, covered.

But if you need to cook it the day before or even longer, it will need to be kept in the refrigerator. It will keep safely in the frig for 3-4 days.

Just pour it into a large bowl with a lid and store it.

Can You Freeze Kielbasa with Pepper & Onions in Spaghetti Sauce?

Of course! I do it all the time. My husband travels a lot, and I prepare his meals to take with him on the road.

To freeze, line a freezer-safe container with freezer paper (this is only to keep the bowl from getting so nasty). Put a single serve size in the bowl, pull the freezer paper over the top, label, and place on container lid, place in freezer.

You can leave it in the container, and it will keep for 6-7 months. I go a step further since his travel refrigerator has limited space.

Once it has been in the freezer for a couple of days, take it out, and place it into a Ziploc bag & it will freeze for about 1 year. But I use this Foodsaver machine, and it will freeze safely for 2-3 years because all the air is vacuumed out.

How to Reheat Kielbasa with Peppers & Onions Recipe

If I’ve left this quick meal on the stovetop for just a couple of hours, we normally pop it in the microwave in single-serve sizes and be done with it. Be sure to use a microwave-safe dish.

But, if it has been in the frig overnight, I don’t like to put it in the microwave. I get my iron skillet out, heat the skillet on the stovetop and pour this homemade Kielbasa recipe in it. Heat for about 15 minutes or until it begins to bubble. And then serve.

Ingredients

  • Kielbasa Sausage (2 packs)
  • 1 cup Sun Dried Tomatoes in Oil
  • 3 cups Bell Peppers (sliced)
  • 2 cups Onions (Sliced)
  • 1 qt Spaghetti Sauce (4 cups)

Instructions

  1. Slice Kielbasa to 1/2 slices. Toss sausage and 4 oz Sun Dried tomatoes into a large cast-iron skillet on medium high.
  2. In the meantime, slice bell peppers and onions. Add to Kielbasa and tomatoes, cook for 10-12 minutes.
  3. Pour in spaghetti sauce, reduce heat to medium low and cover.
  4. Cook for 15-20 minutes until sauce is bubbly and hot.

Notes

This recipe can be cut in half to serve 4.
