Quick and Easy Chicken Pot Pie

My family’s favorite meal is chicken, particularly Chicken Pot Pie.  So without saying, we eat a lot of it!  I’m always looking for different ways to fix it, just to change it up a bit.

My favorite place to find a good recipe is Pinterest or recipe blogs.  I’ve tried several different chicken pot pie recipes but really didn’t find one they enjoyed, so I decided to mix it up a bit and make my own version.  The boys are my friendly critics and will let me know if it’s good or not.

I’ve made several different concoctions, and I think I’ve finally gotten the right combination!  I can make a super large dish for dinner, and they will wipe it out, leaving no leftovers, so I assume it’s good.  You definitely know it’s good when they come in from school and ask if we can have it for dinner.

Quick and Easy Chicken Pot Pie

Ingredients:

  • 1 package Pillsbury Pie Crust, at room temperature
  • 3 cups boiled Chicken – shredded
  • 2- cans Cream of Chicken Condensed Soup 10 oz.
  • 1 small Onion –  chopped
  • 1 cup shredded Kraft Mozzarella Cheese
  • 1 can Green Peas – drained
  • 1 can Carrots – sliced and drained
  • 1/2 stick of Butter
  • 1/2 cup of water
  • 1 tbsp.   Garlic Powder
  • 1/4 tsp.  Crushed dried Celery leaf

Instructions:

Heat oven to 375 degrees. 

Spray a 13 x 9 – (3 quart) glass baking dish with cooking spray

Line the bottom of the dish with one of the Pillsbury pie crusts and set the dish aside

Using a large pot – fill it with water and boil chicken until fully cooked; remove and shred

Chop onions and place into a skillet.  Add butter and saute’ onions until soft and translucent

In a large mixing bowl  –  add shredded chicken, onions, cream of chicken soup, & mozzarella cheese – stir well

Add to the chicken mixture –  peas, carrots, water, garlic powder & celery leaf  – mix well

Chicken Pot Pie Ingredients

Pour mixture into baking dish and spread until smooth.  Slice butter and place on top.

Cover with the second Pillsbury Pie Crust and cut slits in the crust

Chicken Pot Pie ready for oven

Place in preheated oven and bake for 1 hour until crust is golden brown and filling is bubbly.  Serve hot.
