I know when we started Keto, pizza was on the first foods that came to mind I thought I’d have to give up.

But thankfully, we have this crustless pizza at least once a week and I wouldn’t mind if we had if more than that. Its that good – trust me.

Easy Pizza Casserole Recipe

Some may say this recipe is not a real pizza and that’s ok. And I suppose, in all actuality, just maybe it’s not a “round pizza on a crust,” but you still get the full flavor of a hot pepperoni pizza, minus all the carbs.

We’ve have tried several crusts made with cauliflower, almond flour and even cassava flour, but wasn’t able to find one we truly enjoyed.

Much less tastes as good as this low carb pizza. Yes, this one is crustless!

But no fear, if you just can’t stand the thoughts of eating a crustless pizza, but still want to stick with your low carb, gluten free diet, then you need to try my Chicken Parmesan Pizza recipe. It’s made with a ground chicken crust.

I know, I understand. A ground chicken crust does not sound appealing, but trust me give it a try. You’ll be baking it often.

This Pizza Casserole Recipe Saves Time

As I mentioned already, since there is no crust, this recipe can be ready to in a 30 minutes tops.

Since you’ll not be rolling out and waiting on pizza dough to rise, this one comes together quick!

About 10-12 minutes to brown ground beef and while it is browning, you can be prepping the mozzarella cheese and other toppings. Layer it in your casserole dish and toss it in the oven and bake for 20 minutes and dinner is ready.

Ingredients

For this easy pizza recipe, you need only 7 ingredients:

  • Deli Ham – (optional) You can use this as a crust or as the bottom layer. I use a natural nitrite/nitrate free black forest ham.
  • Ground Beef – we prefer to use grass fed beef for our Keto diet but any ground beef will work.
  • Italian Seasoning
  • Oregano
  • Pizza Sauce – try my homemade pizza sauce or any low carb brand
  • Pepperoni
  • Mozzarella Cheese – I buy block cheese to save money and shred it with my Maxam’s Vegetable Chopper. I love this thing!! I use it for making my homemade hash browns, shredding cheese, slicing sweet potatoes and so much more.

How Do You Make Pizza Casserole?

STEP ONE: Brown ground beef with seasonings in a cast-iron skillet

STEP TWO: While beef is browning, cover bottom of a 12×8 casserole dish with ham (these can overlap) and shred cheese

STEP THREE: Once ground beef is brown, add in pizza sauce and stir until mixed well

STEP FOUR: Layer like a lasagna – ground beef, cheese, pepperoni, repeat ending with pepperoni on top

STEP FIVE: Bake at 350° until cheese is bubbly. Dinner is ready!

How to Store Left Over Pizza Casserole

You are going to love this. This crustless pizza casserole recipe is as easy to freeze and store as it is to make.

I often make 2 when I’m cooking it, one is for dinner and the other is for bulk prep individual meals and put into the freezer. I always keep a stash of individual serve meals in the freezer for instant dinners or to have as an emergency stock of meals when times are busy.

If you only need to keep it for a couple days, just store it in the refrigerator in an airtight container. It stores safely for 3-4 days.

This pizza casserole is not only quick to make and delicious, it is low carb and gluten free too.

Cook Time 20 minutes
Total Time 30 minutes

Ingredients

  • 8 pcs. Deli Ham (optional)
  • 16 oz Pizza sauce
  • 1 lb Ground Beef, browned
  • 2 TBS. Italian Seasoning
  • 2 tsp. Oregano
  • 4 cups Mozzarella Cheese, shredded
  • 1/2 cup Parmesan Cheese, fresh shredded
  • 6 oz pkg Pepperoni

Instructions

  1. Preheat oven to 350°F
  2. In large cast iron skillet, brown ground beef with Italian Seasoning and Oregano.
  3. Line 9x12 casserole dish with deli ham (for "crust"). These can overlap.
  4. While beef is browning, shred Mozzarella and Parmesan cheeses, set aside.
  5. Add pizza sauce to browned beef in skillet and mix well.
  6. Layer ground beef, cheese, pepperoni, repeat until all is in casserole dish
  7. Top with pepperoni.
  8. Bake for 20 minutes or until cheese is bubbly.

  1. This is delicious! I used pork sausage in place of the beef and fried fresh mushrooms I need to use and added to the mix and it really was like eating a pizza!
