How do you keep the bottom crust of pumpkin pie from getting soggy?

  • One quick tip is to preheat a cookie sheet in the oven and then put the pie in its baking dish on the heated baking sheet and bake. The heat of the metal pan gives the pie crust a boost of warmth and liquefies the fats in the crust. In addition, the heat helps to prevent it from becoming soggy.
  • If you are baking with a homemade crust, make the bottom thicker than the sides and brush it with egg white before filling it. Doing so makes for a flaky crust.
  • And lastly, filling the pie crust with a hot filling before it goes in the oven is a third way to help to reduce sogginess.

How to Prevent Cracks in Pumpkin Pies

Most pies crack for one of two reasons: 1) over-baking or 2) being cooled too quickly.

So be careful not to over-bake, but get it hot enough to cook it thoroughly. The center should still be a bit giggly or wobbly while it is still hot.

Once it has finished baking, take it from the oven, set it on a cooling rack, and allow it to cool on the counter to room temperature.

How to Store

Once your pumpkin pie has cooled to room temperature, you should eat it within two to four hours.

If you don’t plan on eating it this soon, you should wrap it in plastic and store it in the frig for up to four (4) days.

Freezing Pumpkin Pie

Yes! Beyond the refrigerator, freezing pumpkin pie is simple. Use these easy steps:

  1. Bake and cool to room temperature. I bake mine the day before and leave it sitting on the counter overnight with a towel laid over it.
  2. Next, with plastic wrap, wrap the pie several times, layering the plastic in two or three layers. Then put it inside a resealable plastic bag. It will keep in the freezer for up to one month.

How to Thaw

To thaw pumpkin pie, remove it from the freezer the day before you plan to eat it and place it in the refrigerator. The next day, it’s ready to slice and serve.
