Best Way to Roll a Mess-Free Pumpkin Roll

Making a pretty pumpkin cake roll does not have to be messy. I remember the way my mom used to do it. She would bake the cake and then flip it out of the pan upside-down onto a towel. Then sprinkle it with powdered sugar and roll it up in a towel.

The problem was when she unrolled it. It would stick to the towel and tear or crack, making it a mess.

The best way to roll one is the use parchment paper. While the cake is still hot, roll it up in parchment paper and let it cool to room temperature.

When it’s cool, roll it out, spread it with cream cheese frosting, and then roll it back up without the parchment paper.

Because your pumpkin roll cake will be hot when it’s rolled, it will tend to sweat and can stick to the paper. But an easy way to fix this is to oil the parchment paper lightly. I prefer to use either coconut oil or avocado oil. But any cooking oil will work.

Yes. After spreading the crème cheese and rolling it back up, you should keep it in the refrigerator. Otherwise, the crème cheese will get really soft, and the cake will turn soggy.

Just wrap it in a couple of layers of plastic wrap, place it on a platter, and it will keep fresh in the refrigerator for up to 1 week.

Yes, you can! The best way to keep one fresh is to freeze it all the way through until the cream filling is frozen and then wrap it tightly in plastic wrap.

The reason is if the filling is not entirely frozen before it’s wrapped, ice crystals form on it, and then when it’s thawed, the crystal melts, causing the filling to be soggy.

  1. While the pumpkin cake is still hot, lightly oil a piece of parchment paper, lay the cake on it, and carefully roll it up. Allow it to cool to room temperature.
  2. Once it’s cooled, unroll the from the paper, place the unwrapped roll on a tray or platter, smother it with creme cheese icing, then reroll and put it in the freezer. Allow it to freeze for about 2 hours.
  3. Next, take it out and wrap it tightly with two layers of plastic wrap, put it inside a plastic freezer bag, and seal it.
  4. Label and date the bag and place it back in the freezer. It will keep fresh for up to 3 months.
