Pumpkin pudding is easy to make and a great way to celebrate fall. As an added bonus, it tastes like pumpkin pie but makes for a much lighter and creamier pumpkin dessert.
So it’s not so heavy after you’ve enjoyed a large Thanksgiving meal filled with roasted turkey, mashed potatoes, green beans, and all the other delicious foods at your holiday dinners.
These pudding recipes are full of pumpkin spices and all the autumn flavors, and you can make it ahead to serve later.
Tips for Making a Creamier Pudding
These time-honored tips will make your homemade pudding taste much better than store-bought.
- Add Additional Flavor – No matter if you are making pudding from scratch or using a mix, add vanilla extract for additional flavor.
- Use Coconut Milk – Substituting coconut milk, which is my favorite, in place of cow’s milk will make your pudding richer and creamier.
- Use Wax Paper – Pudding tends to get a film on top when chilling in the fridge. To prevent this, lightly press a strip of wax paper on top and remove it when ready to serve.
- Don’t Stir – I know this will be a challenge. But resist the urge to stir your pudding once it has chilled. Stirring will cause the pudding to become less creamy, and the texture can be lost.
Can You Freeze Pumpkin Pudding?
Sure you can! Allow it to cool to room temperature, then put it inside an air-tight container, label, date, and put it in the freezer. It will keep for up to 90 days (3 months).
Best Way to Thaw Pudding
Frozen pudding will become the consistency of rich and creamy ice cream. No matter if it’s a store-bought mix or homemade from scratch.
So, then you have a dilemma. Do you want to eat it as fun ice cream or a smooth, creamy dessert?
If you prefer rich and creamy, all you need to do is take it out of the freezer and place it in the fridge overnight. Next day enjoy, remember don’t stir. (see tips above)
But if you plan to enjoy it in the next 3-7 days, then freezing is not necessary. It will keep in the fridge for up to a week (7 days).
How To Tell If Pudding Is Bad
Pudding does go bad. Use these three ways to tell when.
- One way to know is when you see pockets of watery liquid separated from the other ingredients. Separation is a good indication of it being bad.
- Another way to tell is that pudding is really sweet. So if the flavor has become a sour or sharp flavor, don’t eat it. It has gone bad.
- A third way to know is if mold has started to grow on top or if it has any discoloration. This will begin subtly and grow. It’s no longer safe and should be tossed into the compost.
