Pumpkin bars can be kept fresh in the refrigerator for up to one week (5 daessentialit’s important to store them correctly to stay fresh. You’ll want to keep them in an air-tight container. This will help them to stay fresh for the longest possible.

A refrigerator is the best way to store pumpkin bars for the short term. However, if you need to keep them longer, they should be frozen.

Can pumpkin bars with cream cheese frosting be frozen?

Yes! Pumpkin bars can be frozen for up to three months and still taste fresh. These can be frozen, either frosted or not. And freezing is an excellent way to extend their shelf life.

But if you know you will not be eating the whole batch, I suggest leaving the cream cheese frosting off what you plan to eat later and frost it when you are ready to eat them. But, it is also ok to ice them and wrap them as well.

How to Freeze

  1. Firstly, place them individually on a platter and then put them in the freezer for 2-3 hours uncovered, just enough time to get hard, so the plastic does not stick to them.
  2. Next, wrap each bar individually. I like to do them individually so to grab one for a quick snack when I have a sweet tooth.
  3. Lastly, place them inside an air-tight container and back into the freezer. They will keep fresh for up to 3 months.

When it’s time to thaw them, remove the plastic wrap first.

Pumpkin bars can be baked in almost any baking dish, but the recommended size is a 9×13 pan or an 8×8 pan.

This 8×8 from Amazon is my all-time favorite for baking. It makes for easy cleanup, it’s dishwasher safe, and it will be worthy of the space taken in your kitchen cabinets!

But then I have this 9×13 dish, also from Amazon, which I will often use.

Of course, you can always use the fallback to the original Pyrex baking dishes; I have these too.

But most of the time, if I take desserts or dishes to a family gathering or holiday party, I enjoy taking them in festive or colorful baking dishes.
