- Use cake flour instead of all-purpose flour. The proteins in flour are a contributing factor to how soft cookies will be. Cake flour is lighter in protein and makes for softer and lighter cookies.
- Use brown sugar in place of white sugar. Brown sugar draws less moisture than white cane sugar, so baking with it and then undercutting a small amount will help to soften cookies.
- Use melted butter primarily for baking. Butter is largely made up of water; melting it before baking with it helps add water and fat, adding flavor and softness.
Keeping Cookies Fresh

Cookies keep fresh longer if they are kept in an airtight container. Once they have completely cooled to room temperature, store them in plastic containers or bags.
They will keep fresh on the counter for two to three weeks and then in the freezer for up to three to four months, and then they begin to lose their flavor.
If your house is anything like mine, there’s no need to store them in the freezer. They don’t last that long. So I keep this cute airtight cookie jar on the counter. It has a silicon seal that creates a pressure-fitted airtight seal. It’s perfect for keeping cookies fresh.
Storing Cookies
- Store different flavors separately. Over time, combined flavors like pumpkin spice or oatmeal will begin to blend.
- If you store several layers of cookies in a container, use parchment paper between them to make them easy to separate.
- Storing cookies in the refrigerator will dry them out. The cool air will absorb their moisture and cause them to become dry and taste bland.
