Onions, garlic, salt, pepper and a little bit of Olive Oil is the perfect seasonings for delicious skillet fried potatoes and onions. Home fried potatoes are perfect for a dinner side dish or even served as a hearty breakfast side.
Many recipes I see take way too long to cook. I prefer quick fried southern recipe myself. Especially when in a hurry or just looking for a quick week night dinner side dish. Trust me, it is not necessary to boil potatoes before frying. You can fry them from raw!
All you need to do is slice thin and pan fry them in oil.
Best Cooking Oil
The best oil to fry with is one that has a high EVOO or “smoke point” level so the oil does not break down with heat. Our family does the Keto diet, and I fry potato slices cooked in an unfiltered organic olive oil.
Best Potatoes To Use
You’ll want to use a potato that is high in starch so it holds its shape when being tossed around in the cast iron skillet or heavy pan. Yukon Golds or Russet potatoes make extra crispy fried potatoes with onions. You can cut the Russet’s into long lengths and have the best country style homemade fries ever!
Easy Skillet Fried Potatoes Recipe
Ingredients:
- 6-7 medium-large potatoes, washed, peeled and sliced
- 1 medium Onion, quartered & thinly sliced
- 1 Garlic Clove, minced (optional)
- 4 tbsp. Extra Virgin Olive Oil
- Kosher Salt
- Ground Black Pepper
Instructions:
1). Wash potatoes well in cold water and thinly peel the peelings away using a sharp paring knife. I normally remove about 2/3 of the peel. Rinse potatoes after peeling. This helps to remove some of the starch. Add peelings to the compost pile.
2). Slice potatoes into 1/4 inch slices either in a coin shape or length wise. I slice them length wise into thin wedges.
3). Add oil to a heavy frying pan, cast iron skillet or electric skillet and heat oil on medium-high heat. Add potatoes, sliced onions and minced garlic to oil. (Just a note, you cannot fry potatoes without oil).
4). Sprinkle salt and pepper to taste. Cover with a lid for 3-5 minutes until potatoes are tender. Uncover and continue to fry undisturbed for 4-5 more minutes. This makes the bottom side good and crispy. Lower heat to medium.
5). Continue to cook, flipping every 3-5 minutes until potatoes are to the desired crispiness your family prefers. We like them almost burned so extra crispy for us please.
And that’s it! You have a perfectly quick fried potatoes and onions for a delicious side dish. Pour them up into a bowl for your family to enjoy.
Quick Recipe Variations
- During the last 3-4 minutes of cooking, dribble some delicious bacon grease over the potatoes for some extra flavor.
- Instead of using garlic, use fresh rosemary, thyme and parsley for a totally different flavor.

Easy Skillet Fried Potatoes
This delicious southern skillet fried potatoes will become a family favorite. You'll love how simple they are to fry up in only minutes. The perfect quick side dish for dinner or even breakfast.
Ingredients
